Paleo Fried Olives

20 olives (pitted, optionally stuffed)

1 egg beaten

1/2 cup coconut flour

1/2 cup almond flour

olive oil (1 inch deep in pan)

 

heat oil

line up 3 bowls (1 for coconut flour, 1 for egg, 1 for almond flour)

3 or 4 olives in a batch:

dredge olives through coconut flour

dip olives in egg

dredge through almond flour

fry for 45 seconds

remove with slotted spoon, placing on paper towels to cool
