Crab Cakes

makes 6 crab cakes

 

1 lb lump crab meat

2 eggs beaten

3 tbsp mayonnaise

1 tbsp coarse mustard

1 tsp old bay

enough macadamia oil to coat bottom of pan

6 sheets sushi nori

thinly sliced dill pickles

 

Combine crab, eggs, mayonnaise, mustard and old bay.

Mix thoroughly and form 6 patties.

Fry patties for 3 minutes on each side on low heat.

Dress with pickles and wrap with nori.
