Spicy Paleo Shrimp
2 - 3 servings
1 tbsp Coconut Oil
4 Cloves Garlic
12 Grape Tomatoes halved
1 tbsp chili paste (Union Brands or similar)
1/2 tsp Ground Cumin
1/2 tsp Coriander
1/2 lb shrimp raw peeled
1/4-1/2 lb broccoli florets
1/3 Cup Coconut Milk
2 tbsp Lime Juice
1/4 cup chopped cilantro
1 pkg Kelp Noodles (or Yam Noodles)
Salt to taste
Heat Coconut oil in large pan. Send garlic through a garlic press and add to oil, cook for one minute.
Add grape tomatoes and cook an additional 1 minutes.
Add chili paste, cumin, coriander and shrimp. Stir well and cook 2 minutes.
Add broccoli. Stir well and cook 2 minutes.
Add Coconut milk. Stir well cook 3 minutes.
Add lime juice and cilantro. Stir well and cook 1 minute.
Salt to taste (take it easy, shrimp will provide salt)
Turn off heat and add noodles. Stir well and let stand 1-2 minutes.
Serve in a bowl. Optionally garnish with additional cilantro.
This recipe was inspired by Robb Wolf's Chili Lime Shrimp. It has morphed into something drastically different, but I still want to give credit where credit is due.
